Turkey Sloppy Joes (Easy Weeknight Meal)

Ever have that moment where you go into the kitchen to cook dinner and realize that you just don’t want to make what you planned? That happened to me last Thursday, but I’m thanking my stars that it did. I had some ground turkey that needed to be used as well as some hamburger buns. One would think that turkey burgers were a no-brainer, but for some reason I cannot seem to successfully cook through burgers. So for me, Sloppy Joes were the obvious choice. I took to Google and found this Rachael Ray recipe that will definitely become a staple in our home.
The ingredients were unique, and even though I subbed a green bell pepper and yellow onion for red bell pepper and red onion that the recipe called for, it is definitely my favorite ground turkey recipe that I’ve ever made!
2 tablespoons extra-virgin olive oil
1 lb. lean ground turkey
1/2 onion, finely chopped
1/2 bell pepper, finely chopped
1 tablespoon grill seasoning blend
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 cup tomato sauce
4 sandwich rolls or hamburger buns
1) Heat oil in a large pan and brown turkey, breaking into crumbles.
2) Add chopped veggies to pan and stir, cooking until tender.
3) Mix grill seasoning blend, brown sugar, Worcestershire sauce and tomato sauce in a small bowl. This is where the magic happens. Pour the sauce evenly over the meat/veggie mixture and stir.
4) Let simmer for ten minutes. Taste and adjust seasoning if needed.
5) Serve atop buns and enjoy! I added some shredded cheddar to the top of mine.
I paired these with Alexia Sweet Potato Fries and cilantro cole slaw. It was one of the best meals I’ve made in a while!
