Sometimes, we get really excited about a dish. So excited, in fact, that it doesn’t matter if you don’t have one of the key ingredients. If you’re like me, you just find a way around it.
Sometimes, that’s not a good idea.
You might not know this about me, but I’m pretty stubborn. When I set my mind to something, it’s going to happen or else I’m going to be pretty whiny. Sunday morning, I wanted my mom’s chocolate pancakes. I wanted to do something kind of “fancy” (aka not a bowl of cereal or Panera) so I went to my kitchen to gather the ingredients, only to find… womp, womp: no eggs.
That didn’t stop me. I was determined that it was going to happen at this point. So I start looking up recipes for pancakes with no egg. The first one that I find seems okay, but I don’t realize until after I’ve put them on my electric griddle that they have cinnamon in them and that might not go so well with chocolate. Thankfully it was a very small batch, so I had hubby try one anyway just for the heck of it. I can’t tell you how fast he spit that sucker out.
I sighed, but understood. So, I tried again. This time with a recipe that seemed like it was going to be good.
I poured the chocolate onto my pancakes and took the first bite. “Mmmm…,” I said, as the chocolate overtook my taste buds. But soon that changed as I bit into the pancake. It tasted like gross flour. (I’m seriously gagging right now even thinking about it.)
Next time, I’m going to have to exercise some self control.
