That Time I Made Crispy Quinoa Patties

I’m not usually one to eat vegetarian meals. We’re just meat-eaters here, more often than not just chicken. I stumbled across this recipe on one of my favorite sites and had all the ingredients at home, so I thought, why not?

I have to admit, I was a little wary! But it turned out to be a great meal. It was super simple and even Nick loved it! Before I knew it, he was running to the kitchen to get another.

Husband tested, husband approved. This is one vegetarian meal that even meat eaters will gobble up in a heartbeat.

Crispy Quinoa Patties

Ingredients:
1 tablespoon olive oil
1 1/4 cups water
1/2 cup dry quinoa
1 cup canned low sodium black beans
1 cup panko bread crumbs
1 egg
1/3 cup salsa
1 teaspoon cumin
1/2 teaspoon chipotle powder

Directions:
Add quinoa and water to saucepan and bring to a boil.
Reduce heat and cook until water is absorbed; set aside.
In a large bowl, mix egg, salsa, cumin and chipotle powder.
Add beans, quinoa and panko, combine well.
Heat a large nonstick skillet with olive oil over medium high heat.
Form the quinoa mixture into four large patties.
Carefully place them in the skillet.
Fry for about three minutes, then very carefully flip.
Continue frying for another few minutes, till both sides are nice and brown.
Serve over greens or on a bun, with avocado and extra salsa.
