Taco Soup Recipe

Today has been a very productive day for me! A package arrived via UPS from my mom that contained a few (7 or 8? oops…) pairs of shoes, my 2 Clemson blankets, and the most important thing… HANGERS!

I was finally able to hang my clothes in my closet and I feel so much more organized now. I even did a few loads of laundry. I also used my newly arrived tennis shoes to go to the gym in our apartment complex for the first time! I walked/ran on the treadmill for 30 minutes, then I came home and did 15 crunches and 20 jumping jacks. I am so glad that I’ve been able to be so active today!

On top of organizing and working out, I also made dinner and I wanted to share it with you all. I actually found the recipe on Pinterest.

Taco Soup

Ingredients:
 2 cans of kidney beans
2 cans of pinto beans
1 can of corn*
1 can of tomatoes**
1 can tomatoes and chiles
1 packet taco seasoning
1 packet ranch dressing mix
1 lb. browned ground beef***
 * The recipe calls for 2 cans of corn, but I missed that part– whoops!
** I only had a normal sized can, but it turned out fine.
*** Or you can use turkey!
First, brown the meat.
Next, drain the fat and add to crockpot.
Add ranch mix and taco seasoning to crockpot.
Drain and rinse beans and add to crockpot.
Add rest of ingredients undrained.
I personally cooked it on high for 5 hours. If you have more time, you can also cook it on low for 8-10 hours. Once it’s ready to eat, you can garnish it with cheese and sour cream. I even cooked some corn bread to eat with it and it was a great addition! The hubby loved it and it made enough for us to eat again tomorrow.
