One of the best things that Nick can say to me is, “Wow, this tastes like my mom’s!” I can happily tell you that that’s exactly what he said about this potato salad.
You see, my husband’s favorite meal is burgers. Now that we’ve moved into a house, we use our grill at least once a week and 95% of the time we are grilling burgers. We’ve pretty much perfected the patties (alliteration alert!) so it was high time we had a great side dish to go with it. Unfortunately, my mother-in-law’s potato salad is amazing (that’s unfortunate because I can’t seem to replicate it) so I set out on my own to come up with another awesome recipe.
After searching recipe after recipe on the internet, I decided that I was going to have to adapt a couple of different ones to come up with something we might like. Thankfully, I think I hit the jackpot with the below recipe! Keep in mind that the below recipe serves 4-6. If you’re making a big batch, you’ll want to adjust it.
Easy Southern Potato Salad
6 medium Yukon gold potatoes, chopped into 1-inch pieces (unpeeled)
1 cup mayonnaise
2 tablespoons dijon mustard (or yellow, whatever your heart desires)
3 tablespoons pickle juice (yes, pickle juice out of the jar… don’t give me that look…)
Freshly ground pepper
2 celery stalks, finely chopped
1 cup onion, chopped
3 green onions, thinly sliced
4 hard-boiled eggs, chopped
Place chopped potatoes in large pot and cover with salted water. Bring water to a boil. Let cook for 10-15 minutes or until tender. Drain and let potatoes cool. In a large bowl, combine mayonnaise, mustard, pickle juice, salt, and pepper. Add potatoes to bowl and fold into dressing. Add celery, onions, green onions, and eggs. Lightly stir, just to combine. Refrigerate and chill until ready to serve. The longer you let it meld in the fridge, the better it will be!
