I was trying to come up with a really snazzy opening line for this post, but really the only thing I know to say is this:
When the hubby requests something, I know it's good.
When he requests it twice in a week after having it only the week before, I know it's a keeper.
I posted a photo of my yummy concoction on Twitter, Instagram, and Facebook and you all went CRAZY. I knew that I just had to post the recipe to the blog!
Creamy Cajun Chicken Pasta

2 boneless skinless chicken breasts, cut into thin strips
4 ounces linguine, cooked al dente
2 teaspoons cajun seasoning
2 tablespoons butter
1-2 cup heavy whipping cream
2 tablespoons chopped sun-dried tomatoes
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder (I used fresh minced garlic)
1/4 cup grated parmesan cheese
Toss chicken in Cajun seasoning in a bowl. Saute chicken in butter or margarine in a large skillet over medium heat, about 5 to 7 minutes or cooked through. Reduce heat, then add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through. Pour over hot linguine and toss with Parmesan cheese.

Ok, so you posted this right about the time I was thinking about dinner for tonight.
So of course I had to try it.
I'm not huge on sundried tomatoes, so I put green bell peppers instead.
And it was divine.

Yummers! Hubby isn't a huge fan of sun dried tomatoes. Do you think I can leave that out?
